9 Spice Butter Chicken

  • 500g Chicken
  • 1 Can Coconut Cream
  • 1 Brown Onion
  • 2 Garlic Cloves
  • 15g 9 Spice mix (list of spices at bottom)
  • 2 tbsp Tomato Paste
Serves 4
Blunt Blade
 
Blitz Onion and Garlic, then add coconut oil, 9 Spice and Tomato Paste
Mix
Temp 60, Speed 3. Time 2 Min
Then add Chicken and Coconut Cream
Cook
Temp 100, Speed 1, Time 30Mins

* 9 Spice Mix
Makes 30g
  • 2 tbsp Garam Masala
  • 1 tbsp Ground Cardamom
  • 1 tbsp Ground Coriander
  • 1 tbsp Ground Ginger
  • 1 tbsp Ground Cumin
  • 1/2 tbsp Paprika
  • 1 tbsp Ground Tumeric
  • 1 tbsp Sea Salt
  • Pinch of Pepper


 
 
 

Smoothie Great for Tummy

  • 1 Cup Almond Milk
  • 1 Cup Almond Meal
  • 1 Cup mix frozen Berries
  • Hand full Spinach
  • Hand full Ice
  • 2 tbsp Coconut Flakes
  • 2 tbsp Chia Seeds
Serves 1 Large
Sharp Blade
 
Add all ingredients and Blitz 40-60 sec until smooth

Kids Summer Strawberry Smoothie

  • 1/2 Cup Water or Soda water for fizz 20150924_161302
  • 2 Large Scoops of Sorbet
  • 4-6 Strawberry
  • Handfull of Ice

Serves 2 Kidlets
(Sharp Blade)

Blitz all ingredients together for 20-40 seconds

Quick Chicken/Veg

  • 500g Chicken
  • 1 Red Capsicum
  • 1 Brown Onion
  • 1 cup Mushroom
  • 2 Carrots
  • Salt & Pepper for seasoning

4 Serves
Blunt Blade

Place all vegetables in and then add chicken on top
Cook
Temp Steam, Speed 1, Time 30mins

Coconut Milk

  • 40 g Coconut Flakes
  • 400ml of Water
400ml Serving 
Sharp Blade





Add ingredients in jug and blitz for 3-5min with scraping sides a few times as you go
Refrigerate for 1hr and any non blitz coconut goes hard on top, remove with spoon
Milk ready to drink or use in recipe


Quick Baked Chicken/Veg NOT Bellini

These are different combinations of baked Vegetables I do each week for Simons work lunches
  • 3 cups chopped Vegetables (any vegetable combo tastes great)
  • 300g Chicken 
  • Salt & Pepper to Season

Cut up all vegetables into large chunks
Add a little coconut oil on tray and melt before laying vegetables on to stop them from sticking
Cover with foil and bake

Crumb Fish NOT Bellini

  • 20150923_1704012 White Fish Fillets
  • 1 cup Almond Milk
  • 1 cup Almond meal
  • 1-2tbsp Lemon pepper spice
8 Portions
 
Cut each fillet into quarters and then soak for a few minutes in milk

In a different bowl add almond meal and lemon pepper, then coat soaked fish in dry mix
If you have time pop in fridge for 30 mins before pan frying with a little coconut oil, only a few mins each side

Patties turn Meatloaf

I started this recipe to make patties but mix made more than I expected so turned it into a loaf instead
  • 500g mince meat
  • 1/2 large zucchini
  • 2 medium carrots
  • 1 onion
  • 2 Garlic Cloves
  • 2 tbsp maple syrup
  • 3 eggs
  • 1 cup almond meal
  • 2 tbsp curry powder
  • 3 rashes of bacon
Meat loaf (8 Serves - slices)
Sharp Blade
 
Blitz zucchini, carrot, onion & garlic then add everything else except bacon and mix
Speed 4 Temp 0 Time 4mins
In a oiled dish line with bacon and add pattie mixture
Bake in oven with foil on top
180d 30min
Take foil of and bake another 10 mins


(If wanting to make patties, just fry mix on a low heat in coconut oil, won't need bacon)
