Thai Red Curry Fish NOT Bellini

  • 2 Fillets White Fish
  • 2 Spring Onion
  • 1/4 Green Capsicum
  • 2 tsp Thai Red Curry Pasta
Serves 2




Dice vegetables into small chunks, spread curry pasta over fish with spoon and top with diced vegetables

Bake
160d, Time 20min
Cover with foil, then at the 15 min mark take foil off

 

Lemon Chicken

  • 500g Chicken
  • 1 Brown Onion
  • 3 Garlic Cloves
  • 1 Green capsicum (or swap for asparagus)
  • 2 cup Mushroom Cut
  • 1 Lemon zest and juice
  • 1/2 can Coconut cream or 200ml Coconut Milk
Serves 4
Blunt Blade

Blitz onion and garlic, then add rest of ingredients
Cook
Temp 100, Speed 1, Time 30min

Avocado Brownie

  • 100g 70% + Chocolate
  • 30g Coconut oil
  • 1-2 Ripe Avocados
  • 1/4 cup Maple syrup or Honey
  • 2 tbsp Cacao powder
  • 2 tbsp Coconut flour
  • 1 tbsp Chia seeds
  • 3 Eggs
  • 1 tsp Vanilla essence
  • 1 tsp GF baking powder
Serves 10 Slices
Sharp Blade
 
Add chocolate and coconut oil and heat
Temp 50, Speed 1, Time 2min

Add Avocado and mix
Temp 0, Speed 4, Time 1min

Will need to scrap side half way through mixing
Then add all other ingredients and mix
Temp 0, Speed 4, Time 30sec

Spoon mix into a lined tin, then bake for 30mins on 180d

No Bake Choc Bars

  • 20150910_2018562 cups Nuts (almonds & cashews I used)
  • 1 cup Shredded coconut
  • 2 tbsp Cacao powder
  • 2 tbsp Chia seeds
  • 2 tbsp Nut butter (almond butter)
  • 2 tbsp Coconut oil
  • 1/2 tsp Vanilla Essence
  • 1-2tbsp Maple syrup or Honey
20 Little Square Serves
Blunt Blade
 
Blitz nuts until roughly chopped, don't blitz to much or it will turn into nut meal
Then add rest of dry ingredients to bowl
In a microwave jug add nut butter, coconut oil, vanilla essence, maple syrup heat for 20 seconds until it's runny
Mix both dry and wet ingredients together
Temp 0, Speed 1, Time 2min
(If mix is a little dry, just add a few drops of water)
Spread out on a lined slice tray, refrigerate for 30 minutes
Then cut up
Best stored in freezer

Chicken Cashew

  • 1 Brown Onion 
  • 2 Carrots 
  • 2 Celery Sticks 
  • 1 Red Capsicum 
  • 500g Chicken 
  • 1 Cup Broth 
  • Hand full of Cashews 
Serve 4
Blunt Blade

Blitz  onion, then add other ingredients
Cook 
Temp 100, Speed 1, Time 30 mins 

At 25 min mark I add the cashews to soften them


Cocao Bliss Balls

  • 140g Cashew (any nuts) 
  • 140g Medjool Dates (about 8) 
  • 20g Dessicated Coconut 
  • 1tbsp Chia Seeds 
  • 1tbsp Cacao Powder 
  • 1tsp Vanilla Essence

Makes 12  (18g each)
Sharp Blade
 
Blitz all ingredients together
If mix is a tad dry to roll, just add a few drops of water
Refrigerate for a few hrs before snacking

Chicken Broth

  • Chicken carcess 
  • 500g bones from drumsticks (necks or feet are perfect as well)
  • Veg scraps 
  • Celery bottom 
  • 1tbsp pepper corn 
  • 2-3tbsp Acv (apple cider vinegar)
Frozen Bones & Veg Scraps
Place Bones & Veg in pot with enough water to cover, add celery, peppercorns and acv
I let it rest for 30-60mins to let the acv do its thing


Then cook away
Everything turns a gross brown colour 
Turn of and let cool for 30-60mins before using colander to seperate liquid


I use a spoon to mush bones to get every last bit of liquid out of them 



Liquid gets refrigerated over night and mush gets thrown 



Once it's been in fridge 6+ hrs the fat separates to the top and the liquid goes jelly like
Spoon fat of top and use jelly for soups etc ( i keep fat to cook dog food)

Jar of Fat and Tub of Broth
Then freeze in muffin tin for individual serves


Sweet Potato Mash

  • 1 Sweet Potato
  • Pepper
  • 2 tbsp Coconut Cream
Serves 4
Blunt Blade

Sweet potato peeled & chopped
Sprinkled with pepper and enough water to cover 
Temp-steam, Speed 1, Time 15min

Once cooked add 2 big scoops coconut cream
Then mixed 
Temp-Steam, Speed 1, Time 2min
(Sweet Potato can be swapped with Pumpkin for Pumpkin Mash, use a little less water)

Quick Soups

Broccoli
  • 1 Brown Onion 
  • 2 Garlic Cloves 
  • 4 cups Broccoli chunks 
  • 1 Zucchini 
  • 1 tsp Cumin seeds or powder 
  • 1 cup of broth 
  • 500ml water


Sweet Potato & Beetroot
  • 1 Brown Onion 
  • 1 Carrot 
  • 1 celery stalk 
  • 1 small sweet potato 
  • 2 Beetroot 
  • 1 cup broth 
  • 500ml water

Pumpkin
  • 1 Brown Onion 
  • 1/4 pumkpin (500grams) peeled 
  • 2 Carrots 
  • 1 teaspoon ginger 
  • 1 cup broth 
  • 500ml water

Tomotoe
  • 1 Brown Onion 
  • 4 Garlic Cloves 
  • 4 Roma tomatoes 
  • 1 Red Capsicum 
  • 2 tsp cumin seeds
  • 2 tsp coriander 
  • 1 can crushed tomatoes 
  • 1 cup broth 
  • 1 can coconut cream

All make 4 serves

I put all ingredients in, blitz for a minute, cook 
Temp100, Speed 1, Time 25mins 

Blitz again for a min
Season with Salt & Pepper when serve
